Ontario Tech acknowledges the lands and people of the Mississaugas of Scugog Island First Nation.

We are thankful to be welcome on these lands in friendship. The lands we are situated on are covered by the Williams Treaties and are the traditional territory of the Mississaugas, a branch of the greater Anishinaabeg Nation, including Algonquin, Ojibway, Odawa and Pottawatomi. These lands remain home to many Indigenous nations and peoples.

We acknowledge this land out of respect for the Indigenous nations who have cared for Turtle Island, also called North America, from before the arrival of settler peoples until this day. Most importantly, we acknowledge that the history of these lands has been tainted by poor treatment and a lack of friendship with the First Nations who call them home.

This history is something we are all affected by because we are all treaty people in Canada. We all have a shared history to reflect on, and each of us is affected by this history in different ways. Our past defines our present, but if we move forward as friends and allies, then it does not have to define our future.

Three TikTok recipes to try this quarantine

Due to the global pandemic, I found myself learning a lot of new things with all this time on my hands. A lot of this free time has been spent on the trending social media app called TikTok. This app is not only fun and creative but turns out, it can teach you more than just the renegade dance. I have learned a lot of new recipe’s and I want to share with you my favourites that I have been making over and over again!

If you’re a coffee-lover, this recipe whip will be perfect for you. TikTok's famous whipped coffee trend is a fun way to spruce up your morning. The first time you try this cold, fun, aesthetic drink, you’ll crave it over and over again. All you need is the ingredients as follows:

  • Two (2) tablespoons instant coffee.
  • Two (2) tablespoons of hot water.
  • Two (2) tablespoons sugar.
  • Two (2) cups milk (measurement may vary).
  • One (1) cup ice (measurement may vary).

Step 1: Begin by placing the instant coffee, hot water and sugar into a bowl. You will then begin to whisk the ingredients together. You can choose to whip the ingredients by hand or with a mixer. Might I add, whisking by hand gives you a great arm workout. Mix the ingredients until you reach a creamy consistency with a light caramel hue. It took me about 15 minutes to whisk the ingredients by hand, however, if you decide to use a mixer, it cuts the mixing time in half. 

Step 2: You can now spoon the mixture over a glass of cold milk and ice. 

If you enjoy more sweetness in your iced coffee, add another tablespoon of sugar to the mixture before whisking. Once the coffee mixture and the milk are added to a glass, mix and enjoy! Don’t forget to take an aesthetic photo of the drink. You can post an Instagram story with a cute caption to show off to all your friends! I know I did, captioned with “Hopping on the TikTok trend!” This drink is so heavenly. It makes me feel like I have woken up to a fresh summer morning. Another tip, if you prefer the classic warm coffee beverage, this whipped recipe also works over a glass of warm milk!

Elevate your morning routine with this tasty recipe. This is a clever and efficient way to make a delicious breakfast sandwich. All you need is:

  • Two (2) eggs.
  • Two (2) slices of bread.

Step 1:  Crack your eggs into a bowl and whisk them together.

Step 2: Heat up your pan on medium-low heat and oil the pan. Personally, I like to use coconut oil for a healthier option. Once the pan is heated, pour your egg mixture into the pan.

Step 3:  After one minute, place your slices of bread (buttered or not) into the pan, on top of the cooking egg. You can butter the slices first for a crispier outcome. The bottom of the slices should be aligned with each other.  Cook the egg until it is cooked through. 

Step 4: Proceed to carefully flip the egg. This will leave the bread toasting on the pan. Let the bread toast for about one minute. 

Step 5: While the bread is toasting, fold the cooked egg into the bread slices. Once this is done, feel free to add any toppings you like to the sandwich. I added cheese and my personal favourite, bacon.

Step 6: Fold the slices of bread together to complete your sandwich. 

I was so excited to try this recipe! I was especially amazed at how it could be made all in one pan. The bread was so crunchy, and the ingredients were delicious. It’s a simple recipe that the entire family can enjoy, because let me tell you, mine did!

Healthy pancakes

I was so excited to try this recipe. As my favourite breakfast food is pancakes, I’ve been consuming a lot due to being in quarantine. I decided I wanted to try a healthier option. If you are a fan of banana and oatmeal muffins, you will love this recipe. The ingredients you will need are:

  • One (1) banana.
  • One (1) egg.
  • Half (1/2) cup oats.
  • Half (1/2) teaspoon baking soda.
  • Half (1/2) teaspoon cinnamon.

Step 1: Mash a banana in a bowl. Proceed to crack an egg into the same bowl, followed by the measurements of baking soda and cinnamon. If you prefer, instead of cinnamon, you can add half (1/2) a teaspoon of vanilla for a sweeter taste. I tried it and it was just as delicious.  

Step 2: Separately, you’re going to blend the half cup of oats until it’s a smooth, powdery texture. I used my coffee grinder and it works just as well. I grinded a quarter (1/4) at a time. When this step is done, add the grinded oats to the ingredients bowl.

Step 3: Once all the ingredients are ready, hand whisk the ingredients. Whisk until all ingredients are mixed together to a textured consistency. 

Step 4: Heat up your pan on medium heat and add some oil. I used coconut oil to grease my pan. Considering the consistency of the mixture is thicker than normal pancakes, I used a spoon to place the batter on the pan. 

Step 5: Cook for a few minutes on each side. If you decide to, before you flip you can add chocolate chips or blueberries to your pancakes. 

When you’re done, place the pancakes onto a plate, and finish them off with toppings of your choice. I topped mine with strawberry slices and a little bit of maple syrup.  I absolutely loved these pancakes, I ended up making them three days in a row. The pancakes were so scrumptious and delightful! I think they are a great alternative to normal pancakes, especially for a healthier option, or even if you’re trying to find something new. This is by far one of my favourite recipes.
